Sadie’s Scrumptious Scones!

Do you still have pumpkin puree in your cabinet, and still have a desire to have something pumpkin, just not pie? Or perhaps, you love pumpkin anything throughout the year and you are happy to make your own pumpkin flavored treats! Look no further than Sadie’s Scrumptious Scones!!

Sadie’s Scrumptious Scones!

Sadie’s Scrumptious Scones are super easy to modify and are typically nut-free. These scones can be made keto friendly by substituting out all purpose flour with your favorite keto flour and sweetener. Every batch of Sadie’s Scrumptious Scones can have a different flavor experience depending on what extra yummies you may want to add in at the end.  Let your culinary creativity take over.

Ingredients: 

2 cups of all purpose flour – May be modified with your preferred baking medium

1 ½ tsp of baking powder – Mandatory

1 tsp of baking soda – Mandatory

¼ tsp of salt

2 tsp of apple pie spice – This is my Top Secret Ingredient! You may use pumpkin pie spice, all spice, cinnamon, or a variety of your preferred spices.

2 eggs – Cold Eggs will do, but they are best used for baking at room temperature. 

1 cup sugar – I would use regular white sugar for this. Honey or Agave may be substituted in place of granular sugar at the same measurement. There are now published studies that demonstrate the long term negative effects of alternative sweeteners of all colors. 

½ cup of oil (any) This may be the perfect opportunity to try out that new nut oil. 

1 can of pumpkin puree

1 tsp of vanilla extract – powdered vanilla, if you can! 

(up to) 1 cup of dried fruit/raspberries/raisins/chocolate chips/nuts/candies (optional)

For this recipe you will need the below Tools:

Oven, 2 bowls, measuring spoons, measuring cups, Whisk (optional, can be substituted with a fork), Fork, Parchment Paper (worth it!), cookie sheet, oven mit.

Directions:

Preheat your Oven temperature to 350℉.

In Bowl 1 combine together the flour, baking powder, baking soda, salt, spices; WHISK (don’t skip this step); set this bowl aside.

In Bowl 2 Beat eggs with a fork; mix in the sugar, combine until creamy(using fork is the best tool to use for mixing eggs); mix in oil, pumpkin puree, and vanilla extract; combine well.

Add the dry ingredients into the wet ingredients, mix well. Remember to scrape the sides and bottom of the bowl with the fork to ensure that all elements are thoroughly incorporated. 

Add in any extras you want. Sadie’s Scrumptious Scones are perfectly delicious without any add-ins, however if you want to plus up your experience, feel free to add  any yummies that come to mind.

Line a Cookie Sheet with Parchment Paper. – All time Favorite Baking Accessory.

Spoon 1 tbsp of batter onto a lined cookie sheet; bake Sadie’s Scrumptious Scones for 11-13 minutes; Sadie’s Scones do not change shape in the oven.

End Result: Perfectly moist and scrumptious soft scones. Let cool. ENJOY!!!

Storage: Place Sadie’s Scrumptious Scones in an air-tight container for 3-5 days at room temperature. If you are layering the scones, use parchment paper to divide the layers. You may Refrigerate these scones for up to a week. To freeze, wrap scones individually in one layer of plastic wrap, then a second layer of foil, and lastly a third layer of plastic wrap. Freeze for up to 2 months. 

To Warm: Microwave the scones for 10-30 seconds to revive the scones to their warm perfection.

Why I love this recipe.

I absolutely love this recipe because Sadie’s Scrumptious Scones always come out soft and moist, every single time. This recipe is easy to modify allowing it to fit into virtually any flavor pallet and/or diet. For me, eating Sadie’s Scrumptious Scones is like biting into a cloud made of all the best parts of Autumn. The optional add-ins also create a variety of texture for your mouth to enjoy. 

Why whisking is so important in my opinion:

Whisking is many things: most importantly it is homogenizing all the dry ingredients. Baking is definitely a science, and ingredients like baking powder and baking soda really help develop the body to the final product. Whisking is the best and most important thing you can do when baking. This also takes the clumps out of the dry ingredients, adding some air allowing the dough to be light and full.  

Why the Fork is my number one favorite kitchen tool!

Let’s talk about versatility! Basically, the fork can do anything a whisk or a stand mixer can do and the fork is much easier to clean than either the whisk or a stand mixer. Other kitchen experts will say that the fork is the best tool to mix eggs with. You can also use a fork to scoop out dough onto a cookie sheet, or scrape the mixing bowl clean. I also love using forks for my morning coffee. I believe the prongs in the fork allow it to be a better mixing tool. Perhaps most importantly, I love using a fork to eat ice cream. The spade shape of a spoon is counterintuitive to digging into a frozen dense substance. Ice climbers use a pick for a reason. When shoveling ice cream from its pint sized container into my mouth, I am secure knowing that I am no longer flinging ice cream across the room. Thanks Fork!
